A super delicious take on baked french toast with fresh blueberries and buttery croissants.

Ingredients:
8 Tablespoons Butter, Melted
1/2 Cup Light Brown Sugar
1 1/4 Cups Heavy Whipping Cream
1-2 Teaspoons Cinnamon
1 Teaspoon Vanilla
4 Large Eggs
11 Mini Croissants
1 1/2 Cups Blueberries
Powdered Sugar for Dusting
Directions:
1. In a bowl, combine the melted butter, sugar, heavy whipping cream, cinnamon, vanilla, and eggs, whisking until well combined. Set aside.
2. Grease an 8 by 8 inch baking dish with butter or baking spray. Tear each croissant in half or in thirds and layer in the baking dish. Distribute the blueberries over and between the croissants. Pour the cream mixture over the croissants. Gently press the croissants down so that they are completely soaked in the mixture.
3. Bake in a preheated oven at 375F for 30-35 minutes. Dust with powdered sugar before serving. Can be served warm or room temperature.
