Kaimati dough ingredients:
1 1/2 cups all purpose flour
2 tbsp cornstarch
1 cup plain yoghurt heap full
1 tsp instant dry yeast
3/4 cup warm water (use as needed)
Mix the dough with all of the above ingredients and beat well.
Remove all the lumps to a smooth dough not very thick not very light
As shown in the video. Let rise for 2 hours until double in size.
In a karai/wok add oil and fry the kaimati dough into small balls on medium high heat.
Keep on turning until the dough is golden brown. Remove and let it cool a bit.
Syrup Ingredients:
1 cup sugar
1 cup water
1 tbsp lemon juice
1/2 tsp cardamom powder
Few strands of saffron
Put all of the syrup ingredients in a pan on medium high heat cook until the thermometer temperature reaches 180 F or the back of the spoon is coated.
0nce the kaimati have cooled slightly, then add in the syrup mixture and coat the kaimati. Put in a serving bowl and enjoy.
This kaimati should be nice and crispy.
