KALEJI KHAAS
Ingredients
Mutton kaleji thin julienne cut ½ kg
Butter 2 tbsp
Oil 2 tbsp
Salt 1 tsp
Chili powder 1 tsp
Ginger garlic chopped 1 tbsp
Crushed red chili 1 tsp
Crushed cumin 1 tbsp
Lemon juice 2 tbsp
Potatoes cut into thin slices like wafer chips and deep fry
Onion sliced 1
Green chilies chopped 2
Tomatoes chopperised 2
Ginger garlic chopped 1 tbsp
Coriander leaves 3 tbsp
Crushed black pepper 1 tsp
Yogurt ½ cup
Nan 1 cut in cubes
Oil ¼ cup
Tomato paste 1 tbsp
Kashmiri chili paste 1 tbsp
Ingredients for Tadka
Chopped garlic 1 tbsp
Chopped coriander 2 tbsp
Chili powder ½ tsp
Oil ¼ cup
METHOD
Heat oil ¼ cup, add sliced onion, fry for 2 mins, add chopped ginger garlic, fry till transparent, add chopperised tomatoes, fresh coriander, salt, crushed black pepper, crushed red pepper, when done, remove in a platter in a straight line.
METHOD FOR KALEJI
In a wok add butter, add liver with ginger garlic paste, fry well, add crushed red chilies, cumin, chili powder, lemon juice, salt, keep frying liver. Lastly give tadka on liver, serve with cooked nan cubes, sauted in tomato mixture in the platter, first layer nan, then put tomato mixture, then fried potatoes, then liver, dahi mixture, lastly add tadka.
MALAI MUTTON THAL
Ingredients
Mutton pasanda 1 kg
Kashmiri grounded chilies 2 tbsp
Salt 1 ½ tsp
Black pepper crushed 1 tbsp
Ginger garlic 1 tbsp
Tikka boti masala 1 tbsp
Chili powder 1 tsp
Crushed red chili 1 tsp
Lemon juice 2 tbsp
Crushed cumin 1tsp
Crushed coriander 1 tsp
Papaya pasta 1 tbsp
Yogurt 1 cup
Cream 4 tbsp
Ingredients for Malai Sauce
Yogurt 1 cup
Cream ½ cup
Lemon juice 2 tbsp
Salt ¼ tsp
Black pepper crushed 1 tsp
Red chili paste 1 tbsp
Mint finely chopped 1 tbsp
METHOD FOR MALAI SAUCE
Heat ¼ cup oil, add 1 tbsp chopped garlic, ½ tsp crushed red chilies, and put tadka on yogurt.
Ingredients for Onion Salad
Onion sliced 2 soaked in water for 1 hour, remove
Coriander leaves chopped ½ cup
Salt ½ tsp
Sumac ½ tsp
Lemon juice 2 tbsp
Crushed red pepper 1 tsp
METHOD FOR SALAD
Mix all together and serve in thal.
METHOD FOR PASANDA
Marinate pasanda with all the given ingredients for overnight, cook in the pressure cooker for ½ an hour.
TO SERVE
On a big thal, put three folded tortillas, out malai mutton, in the center malai sauce in one bowl, vegetables, bbq in one side of platter, serve pasanday with salad, vegetables, nan and rice.
