Ingredients:

Brining liquid:
3.5 cups water
1 tbs baking soda
1 tbs kosher salt


8 organic lamb chops (3/4 lb)
1 tbs olive or avocado oil
1-2 tsp kosher salt
1 tsp dried thyme
1 tsp dried basil
1 large garlic clove
1/2 tsp black pepper
1-2 tsp liquid smoke

Compound butter:
4-5 cloves roasted garlic (season with an essential oil and a little salt)
1/2 stick butter
1-2 tsp fresh parsley
