🥘 Ingredients:
1 big brinjal (eggplant)
1 tbsp red chili powder
1 tbsp coriander powder
½ tbsp turmeric powder
1 pinch salt
1 tbsp oil
2 tbsp curd (yogurt)
1 tbsp cumin seeds
1 dry red chili
2 tbsp mustard oil
Few curry leaves
Fresh coriander leaves
Few drops of lemon juice
🍳 Recipe Steps
First, take one big brinjal and cut it into round slices.
In a bowl, add 1 tbsp red chili powder, 1 tbsp coriander powder, ½ tbsp turmeric powder, 1 pinch of salt, and 1 tbsp oil. Mix well.
Apply this masala mix evenly on all brinjal slices and keep aside for a few minutes.
Now in another bowl, add 2 tbsp curd, 1 tbsp red chili powder, ½ tbsp salt, 1 pinch turmeric powder, and a little cumin powder. Mix well.
Heat 2 tbsp mustard oil in a pan, add cumin seeds, curry leaves, and one dry red chili. Let it splutter.
Add the masala-coated brinjal slices to the pan and cook them on both sides until golden brown and soft.
Once the brinjal is cooked properly, add the curd mixture and mix slowly.
Mash everything gently, add chopped coriander and a few drops of lemon juice on top.
