Spicy Pork Belly Sambal Shrimp Paste
Ingredient
300 g 3 layer pork belly
20 g shrimp paste/belacan
1 tsp tamarind paste
100 g chilli paste
4 tablespoon cooking oil
A few sliced kaffir leaves for garnish
Ingredient - Fresh pounded Cordiment
8 shallots
4 garlic
2 stalk upper portion lemongrass.
Ingredient- seasoning
1 tsp Chicken granules
1 tbsp sugar
Direction
Heat up 4 tablespoon cooking oil.
Add shallot, garlic and lemongrass, Stir fried until aromatic.
Add in shrimp paste /belacan, Add chilli and then tamarind paste, and seasoning.
Stir fried and then some water, a little at a time so it won't dry out. Do not pour all the water one shot by doing this method the fresh spicies will may not be that fragrant.
Taste, adjust salty and sweetness as per own preference Allow it to simmer a few second.
Finally add in pork belly Stir fried for a few second. That's it ready to dish up.
