Join me for a peaceful day of slow living, homemaking, and batch cooking. In today’s cosy vlog, I’m embracing the quiet of the season with simple homemaking tasks and meal prep ideas. I prepare comforting comforting recipes for the week, perfect for keeping things simple and nourishing throughout the week. There is also a calming nature walk to reset my energy and we look for signs of spring.

Recipes:
Homemade Granola
3 cups oats, 1 cup mixed nuts, 1/2 cup shredded coconut
1/4 cup honey/maple syrup, 1/4 cup melted coconut oil
1 tsp vanilla, 1/2 tsp cinnamon, 1/4 tsp salt
Bake at 180°C for 20-25 minutes, mix in dried fruit.
Sweet Potato & Chickpea Curry
Sauté 1 onion, 2 garlic cloves
Add 1 large sweet potato, 1 can chickpeas, cumin, turmeric, 400g tomatoes, 1 cup veggie stock
Simmer 25-30 minutes, season with salt & pepper.
Butter Chicken Sauce
Sauté 1 onion, 2 garlic cloves, 1-inch ginger
Add 1 tbsp garam masala, cumin, coriander, turmeric, chili powder
Add 400ml coconut milk, 400g chopped tomatoes, 2 tbsp tomato paste, 1 tbsp honey
Simmer 20-25 minutes, season with salt & pepper.
