This is a simplified version of the Cantonese Clay Pot Rice dish. You don't even need a clay pot to make this recipe. Its a simple dish, you can cook all the ingredients together all at once with no additional steps. Furthermore, other than the rice, all ingredients can be varied to whatever you desire. It can be totally vegetarian or vegan, the sauces used can be anything you have at home ranging from siracha to soy sauce.
Start with adding the rice and water. The amount of rice and water can be varied also, in this recipe, it is 140g of rice and 200g of water but it can easily be 300g of rice and 400g of water. Add the sauce into the rice. You can easily just pour directly from your sauce bottle into the rice pot. You can use any sauce you wish. Add the topping ingredients, again, this can be anything from seafood to purely vegetables like broccoli and spinach. Mushrooms are a classic in this dish.
Set the heat at full power for 10 minutes on an electric hob, then 8 minutes at 30% power. It can remain on the electric hob after a total of 18 minutes are up and the residual heat from the hob and the heat retention roperties of the cast iron will keep the dish warm. The handsome Le Creuset pot can then be served right to the table.
