Is Queso Cotija pasteurized

Queso Cotija was a fairly simple cheese to make at home, but with both Mesophilic and Thermophilic cultures and a lot of salt I wasn't sure what this cheese was going to taste like. Check out the video to see if the cheese making was worth the effort.
