木耳炒山药
食材:
干木耳:1把,提前泡发
胡萝卜:中等大小一个,削皮切薄片
山药:300克,削皮切薄片
蒜:3瓣,切薄片
青葱:1根,切2厘米的小段
盐: ½ 茶匙
蚝油:1汤匙
水淀粉:2茶匙淀粉+2汤匙水
油:1汤匙
水: ¾ 杯
做法:
1. 中火热锅,放入油,当锅开始冒烟时,倒入葱和蒜,翻炒30秒至香味出来。放入泡好的木耳,胡萝卜和山药。翻炒30秒,然后倒入水,盖锅盖煮10分钟。
2. 加入蚝油和盐,搅拌均匀。倒入水淀粉,搅拌至酱汁粘稠即可。
Stir-fried Wood Ear Mushrooms and Yam
Ingredients:
Dried wood ear mushrooms: 1 handful, soaked in advance
Carrot: 1 medium-sized carrot, peeled and thinly sliced
Yam: 300g, peeled and thinly sliced
Garlic: 3 cloves, thinly sliced
Scallion: 1 stalk, cut into 2cm sections
Salt: ½ teaspoon
Oyster sauce: 1 tablespoon
Cornstarch slurry: 2 teaspoons cornstarch + 2 tablespoons water
Oil: 1 tablespoon
Water: ¾ cup
Instructions:
1. Heat a wok over medium heat, add oil, and when the wok starts to smoke, add scallion and garlic, stir-fry for 30 seconds until fragrant. Add the soaked wood ear mushrooms, carrot, and yam. Stir-fry for 30 seconds, then add water, cover, and cook for 10 minutes.
2. Add oyster sauce and salt, stir well. Pour in cornstarch slurry, stir until the sauce thickens.
