Persian Ghormeh Sabzi Stew 🍃🍲
Ingredients:
1 medium onion, finely chopped
500g lamb stew meat
700g sautéed ghormeh sabzi herbs (parsley, fenugreek, leek, etc.)
1.5 cups red kidney beans (pre-soaked)
Spices: turmeric, garlic powder, onion powder, paprika (to taste)
Salt: to taste
200g meat broth or bouillon
6–7 dried limes (limoo amani), pierced with a fork
Fresh lemon juice: to taste

Instructions:
1. In a pot, sauté the chopped onion until golden.
2. Add the meat and cook until it changes color.
3. Add all spices and stir for 1 minute to release the aroma.
4. Add the soaked kidney beans and sauté briefly.
5. Stir in the sautéed herbs and pour in the broth.
6. Add enough water to cover the ingredients, then drop in the dried limes.
7. Cover and simmer over low heat for 2–3 hours until meat and beans are tender.
8. Add salt and lemon juice to taste at the end.
9. Let it simmer uncovered for another 30 minutes until the stew thickens and releases oil on top.
