📝 Ingredients:
For the Kabab Paste:
1 Packet of Mushrooms (12-14 pieces) 🍄
2-3 Onions (sautéed) 🧅
2 tbsp Chopped Ginger 🧄
12-15 Cashews (Kaju) 🍥
Spices:
1 tsp Red Chilli Powder 🌶️
1 tsp Coriander Powder (Dhaniya Powder) 🌿
1 tsp Cumin Powder (Jeera Powder) 🌱
1 tsp Garam Masala 🧂
1 tsp Cinnamon Powder (Dalchini) 🍂
Salt (to taste) 🧂
2 tbsp Roasted Besan (Sattu) 🌾
Supporting Dishes:
Fresh Coriander/Dhaniya Chutney 🌱
Laccha Onion (Thinly sliced onions soaked in vinegar or lime) 🧅
Maida or Aata Roti (Flatbread of your choice) 🍞
🔥 Method:
Step 1: Prep the Kabab Paste
1️⃣ Sauté the Mushrooms: Quickly sauté your mushrooms for about 2 minutes until soft and fragrant.
2️⃣ Make the Paste: Grind the sautéed mushrooms into a fine paste. 🍄
Step 2: Prepare the Onion Mixture
3️⃣ Sauté Onions & Garlic: In a pan, sauté chopped onions, garlic, and cashews until golden brown and crispy. Let them cool down and then blend them into a smooth paste. 🌰🍯
Step 3: Spice It Up
4️⃣ Spice the Mixture: Heat oil in the pan and add the onion paste along with the red chilli powder, coriander powder, cumin powder, garam masala, and cinnamon powder. Stir and cook for a couple of minutes. 🔥
5️⃣ Add Besan/Sattu: Mix in roasted besan (sattu) and stir until the mixture is consistent. 🌾
Step 4: Final Touches
6️⃣ Combine Everything: Add the mushroom paste to the spiced-up mixture, stir well, and let the flavors blend together.
7️⃣ Cool & Shape: Allow the paste to cool, then shape it into smooth kababs. 👐
