Tandoori masala is a spice mix used in traditional tandoor or clay oven cooking on the Indian subcontinent. The spices are mixed with strained yoghurt and in the resulting mixture are marinated chicken, fish or vegetables, then baked at high temperature until crust is obtained.

YOU WILL NEED:
800 g chicken breast
1-2 tbsp. Tandoori masala
1 tbsp. Garam masala
2 tbsp. cumin seeds, 2 bay leaves, 2 cinnamon sticks, 2 black cardamoms, 5-6 green cardamoms, 5-6 cloves
200 g yogurt
2 tbsp. grated ginger
2 tbsp. grated garlic
1 big onion
3-4 tbsp. tomato puree
800 g fresh tomatoes (or 2 tins)
50 g raw cashew nuts
150 ml cream/milk
3 tbsp. ghee (or some neutral oil)
salt
chili (optional)
basmati rice to serve
