A quick and very simple way to pickle cherry tomatoes.
The rosemary gives them a lovely taste.
Pickled Cherry Tomatoes
INGREDIENTS - to fill a 1 litre jar
Rosemary stem cuttings
1 cup apple cider vinegar
1 cup water
750g cherry tomatoes
1 garlic clove
2tsp sea salt
2tsp honey or sugar (optional)
INSTRUCTIONS
Punch the rosemary sprigs through tomatoes, then place in jar.
When you run out of rosemary sprigs, poke a skewer through the remaining tomatoes and place them in the jar.
Mix the vinegar, water, sugar and salt and stir to dissolve the solids.
Pour vinegar mix over top of tomatoes.
Label and refrigerate.
Wait at least one week before eating but can be stored in the fridge for 6 months.
