Today, I'm introducing a Sushi Restaurant that I often look to for inspiration when making sushi at home. I’ll be using what I learned here in my own sushi from now on!!
This restaurant, Sushi Hiroya, was selected as one of Tokyo’s Top 100 Sushi Restaurants in 2025 on the review site Tabelog.
This is recommended if you’re looking to try a sushi restaurant that made the top 100 list. It’s easy to get a reservation.
I will write down my impressions of Sushi toppings that particularly made an impression on me.
①Charcoal-seared cherry salmon (Sakuramasu)
The smoky flavor from the charcoal grilling matched perfectly with the fattiness of the Sakuramasu. Sakuramasu is a type of salmon caught in Japan. Compared to typical salmon, I thought it was much lighter and less oily. The meat was tender, and it paired beautifully with the sushi rice!!
②Medium fatty tuna (Chutoro)
The tuna is sourced from Kitani Suisan, and it was delicious. One thing I noticed, though, was the temperature of the sushi rice—it felt a bit too cold. I had a feeling the chūtoro would melt in my mouth even more if the rice was slightly warmer. I actually tried comparing it at home, and as I thought, warmer rice really brought out the best in the Chutoro.
③ Simmered eel(Unagi)
The eel was simmered until soft, and it practically melted in my mouth. That said, I personally feel that grilled eel tastes even better. When it’s just simmered, the small bones can remain, and I did notice that a bit while eating. With grilling, the bones tend to break down more, and I can enjoy the eel without feeling them. Still, the flavor itself was great!!
