Delicious Chicken Spinach Methi: A Winter Delight.”
Today, we’re making Chicken Spinach Methi. The ingredients we need are: 1 kilogram of chicken, 1 kilogram of spinach, 250 grams of fenugreek leaves, 1 bunch of coriander, 1 bunch of mint, 4 to 5 green chilies, 2 tomatoes, half a cup of oil, 2 teaspoons of garlic paste, 2 teaspoons of ginger paste, 1 teaspoon of red chili powder, half a teaspoon of chili flakes, salt to taste, whole garam masala (including green cardamom, black pepper, cumin, and cinnamon), 1 teaspoon of ground garam masala, 1 teaspoon of turmeric powder, 1 teaspoon of coriander powder, 3 to 4 bay leaves, and for the tempering, we’ll include 2 to 3 cloves of garlic (finely chopped), 4 to 5 whole red chilies, and half a teaspoon of cumin.
Today, we’re preparing Chicken Spinach Methi, a delightful dish that’s especially delicious when made with butter and ghee, and it’s perfect for winter. First, we’ll heat the oil and sauté the bay leaves and whole garam masala. Then we’ll fry the chicken until it’s golden. Once the chicken is fried, we’ll add the garlic and ginger paste, along with the other spices like red chili powder, salt, turmeric, chili flakes, coriander powder, and ground garam masala.
Meanwhile, we’ll wash the spinach thoroughly and blanch it in boiling water. After draining the water, we’ll finely mash the spinach by hand—no machine, as that can lose some of the flavor. Then we’ll add the mashed spinach to the chicken. Next, we’ll wash the fenugreek leaves, separate the leaves, and add them to the chicken and spinach mixture. We’ll mix everything well and let it cook, stirring occasionally.
After that, we’ll add the chopped tomatoes. As the spinach, methi, and chicken cook, they’ll release their juices, and the chicken will become tender. We’ll cover it and let it simmer on low heat. Once everything is well-cooked, we’ll add finely chopped mint and coriander, along with some chopped green chilies, and then cover it again to let the flavors blend.
Finally, for the tempering, we’ll heat some oil and add finely chopped garlic and whole red chilies. Once the garlic is golden, we’ll add cumin seeds. When the cumin sizzles, we’ll pour this tempering over the chicken spinach methi and top it with some finely sliced ginger.
