1 cup semolina/rava/sooji
1 ½ tbsp sesame seeds
¼ cup fresh grated coconut
1 tbsp ghee + 1 tbsp
3-4 tbsp cashews
½ tsp cardamom powder
½ cup powdered sugar
4-5 tbsp boiled milk at room temperature
Saffron (optional)
Roast the sesame seeds on medium flame until golden and keep aside to cool.
Roast the coconut on medium flame until all the moisture evaporates and turns golden. Keep aside to cool.
Roast the semolina on medium flame with 1 tbsp ghee until fragrant making sure it doesn't change color.
Keep aside to cool.
Grind the cooled roasted sesame seeds to a powder and keep aside for a while.
Fry the cashews in 1 tbsp ghee until golden and keep aside to cool. Rough grind them and keep aside.
Combine all the above ingredients in a bowl and mix well.
Add the cardamom powder and saffron (optional).
Add the milk a little at a time and keep mixing until it's ready to bind together.
Note: you need to add the milk in portions and keep mixing to make sure they can bind tightly.
Take small portions of the mixture and roll into balls of desired size.
Leave them aside for 2-3 hours for them to firm up yet be soft while eating.
Tip: keep all the ingredients ready and roast beforehand to make the ladoos quickly.
