European butter, such as French butter, is an extraordinary ingredient in the kitchen. Due to its high quality, 82% (and higher) fat percentage, and distinctively tangy cultured flavor, its versatility is unmatched. It’s perfect for enhancing the overall flavor and quality of baked goods, sauce bases, and more.
To get a better sense of key butter techniques, we hired Chef Dave Beran of Pasjoli French Bistro in Santa Monica. He came to Feedfeed LA and taught two influencers and one of Feedfeed’s own three of his favorite techniques for cooking with French butter. Julia of @thespicyjuju, Krysten of @thedailykale, and Claire of @thefeedfeed joined Chef Dave at our downtown Los Angeles studio for a day of cooking, eating, and education, all centered around butter.
Chef Dave walked us through how to make the perfect brown butter, a variety of compound butters (all with different uses), and his take on a whipped beurre blanc. Following this dynamic day of learning, Julia, Krysten, and Claire went on to create their own recipes using one of the three techniques they learned with Chef Dave. Their unique recipes are representative of these three core techniques using European butter from France.
