Hanucah this year begins on 14 December and lasts for eight days. Because the festival commemorates how the oil in the Temple lasted miraculously for eight days, it is customary for Jews to eat fried foods. Ashkenazim indulge in latkes and jam doughnuts, but Sephardim indulge in a rich variety of different fried foods. Raquel Levy-Toledano from Morocco, Viviane Bowell from Egypt and Linda Dangoor from Iraq will each share a favourite Hanucah recipe.
