Ingredients
1 box of vanilla cake mix
1 tsp of baking powder
2 large eggs
⅓ cup of vegetable oil
½ teaspoon of vanilla extract
36 vanilla wafers (crushed)
4 tablespoons of melted butter
1 box of instant banana pudding
2 cups of milk
12 slices of banana
1 tub of whipped topping
Directions
In a medium-sized bowl add the instant banana pudding mix and two cups of milk. Whisk it for about two minutes. Sit it in the refrigerator to chill while you prepare the remaining ingredients.
Add your vanilla wafers to a food processor and pulse until finely crushed.
Put the wafers into a bowl and add the four tablespoons of melted butter and mix together.
Spray the muffin tin and add a large spoonful of the crushed vanilla mix to each muffin cup and press down to form a base. Then set aside.
In a large mixing bowl add the cake mix and baking powder. Combine until mixed.
In a small bowl add 2 eggs, vegetable oil, and vanilla extract, then mix until combined.
Add the egg mixture from the small bowl to the cake mixture and mix until combined.
Preheat the oven to 350°F.
Add 1/12 of your cake mix to each muffin cup. Then bake at 350°F for 15-20 minutes (until the center is done).
Remove them from the oven, set aside and allow to cool.
Once the muffins are cooled, press down in the center of each muffin cup with a shot glass to form a crater for holding the pudding. Be careful not to press a hole all the way through.
Using a butterknife remove your cookie cups from the muffin tin.
Add a heaping spoonful of the pudding mix to each cookie cup and top with whipped topping.
Top with a slice of banana and sprinkle remaining crushed vanilla wafers.
