In this video, I share how to make a 1942 recipe for an apple upside-down cake in a cast-iron pan.
Recipe: Apple Upside Down Cake: (Adapted From The New American Cookbook, 1942)
1/4 cup butter
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup whole milk
2-4 Granny Smith apples, peeled, cored, and sliced thinly
2 teaspoons cinnamon mixed with 1/4 cup sugar
1. Cream together the butter and sugar. Then, add in the vanilla, well-beaten egg, and vanilla. You may use a rotary beater or an electric mixer for this step.
2. Sift the dry ingredients together in another bowl and add alternately with the milk to the first mixture.
3. Spread a thick coating of butter or shortening in a cast-iron pan or a 9-inch pie pan.
4. Spread the apple slices on the bottom of the greased pan in a circular pattern.
5. Sprinkle the apples with the cinnamon sugar.
6. Spread the cake mixture over the apples in the pan and use a knife to make sure the cake mixture covers all of the apples.
7. Bake in a 300°F oven for 30 minutes or so. Check for doneness after 20 minutes, but make sure the top of the cake is browned and done in the middle. The apples need time to cook thoroughly.
8. Loosen the sides of the cake and turn it onto a serving plate. You may wish to serve this with whipped cream or ice cream. Enjoy!
