INGREDIENTS LIST
Green Seasoning/Marinade:
3 tbsp vegetable oil
3 tbsp white vinegar
2 tbsp dried allspice
1 tbsp salt
2 heads garlic, peeled
2 inches fresh ginger
1 medium onion
2 stalks escallion (green onion)
Fresh thyme (a generous amount)
3 scotch bonnet peppers (or adjust to taste)
Large pinch of black pepper

For Seasoning the Chicken:
2 tbsp dark soy sauce
1 ½ tbsp homemade browning (or store-bought)
2 tbsp Cajun seasoning (or use Complete/all-purpose seasoning)
2 tbsp green seasoning (from above)
Additional black pepper to taste

For the Glazing Sauce:
Leftover chicken marinade
1 tbsp green seasoning
1 cup tomato ketchup
1 ½ cups orange juice (or pineapple juice as an alternative)

For the Roast Potatoes:
6–7 round white potatoes, peeled and cut into wedges
Salt, to taste
Black pepper, to taste
Cajun seasoning, to taste
Olive oil, for drizzling
Fresh parsley, chopped (for garnish)
