Traditional Kerala Sambar

For Sambar powder
Ingredients:-
Coriander seeds: 6-8 tbsp
Urad dal: 1 tbsp
Channa dal: 1 tbsp
Fenugreek: 3/4 tbsp
Asafoetida: small piece (1 inch)
Dried red chillies: 10 nos
Curry leaves: few
For Sambar
Ingredients:-
Tuvar dal: 1 and 1/2 cup
Water: 4 cups
Sambar powder: 3 tbsp
Vegetables: 3 cups (I used brinjal, drumsticks, pumpkin, ladyfinger)
Tomato: 1 cup
Tamarind: lemon sized ball
For tempering/tadka
Ingredients:-
Oil: 1 tbsp
Mustard seeds: 1/2 tsp
Fenugreek seeds: 1 tsp
Curry leaves: few
Dried red chilli: 3-4 nos
Add ladyfinger also and saute for a few minutes
( I have added 1 tsp chilli powder and 2-3 tsp of sambar powder also while tempering)
Coriander leaves: few (chopped)
