RECIPE:

Ingredients:

Milk
Saffron
1 tablespoon Crushed Almonds
1 tablespoon crushed Pistachio
1 teaspoon Cardamom
1/4 cup of Sweetened Condensed milk
1/4 cup of vinegar
Water
1/2 teaspoon of cornstarch
1 cup of sugar

Directions:

In a large pot heat 3 cups of milk and a small pinch of saffron until boiling and stir continuously to make sure the milk doesn’t burn to the bottom of the pan (we usually heat on a medium heat). Whilst this is heating up crush up the nuts and set aside. Once the milk has boiled, add in the sweetened condensed milk, crushed nuts (pistachio and almonds), and cardamom powder and stir well. Keep this on the heat until you have reached your desired consistency for your sauce (ours took around 15-20 minutes to get it very thick just the way we like it - but remember to keep stirring the milk throughout!). Once this has been done take off the heat and set aside for later.

In a seperate large pot heat up 1 litre of milk under a medium heat again stirring continuously to ensure it doesn’t stick or burn to the bottom of the pot. Whilst this is heating up in a cup mix together 1/4 cup of vinegar and 1/4 cup of water and leave aside. Once milk begins to boil, remove it from the heat and add in the vinegar mixture little by little whilst continuously stirring until the milk begins to curdle and make the paneer mixture we are after. Once it is completely curdled use a cheese cloth/kitchen towel to remove the excess moisture and wash it under water to remove any of the vinegar flavour from it. Let this sit for around 20 minutes to dry it out further. Next, kneed this mixture for around 15 minutes with the corn starch and roll into small balls and then flatten them slightly with your hands (don’t make my mistake and make them too thin!).

Next, in another large pot add in 4 cups of water with 1 cup of sugar and bring to the boil. Then, add in the cheese that you have made to this and cover with a lid and cook for around 20 minutes in the boiling sugar syrup. Once this has been done, place the cakes onto a towel and soak off some of the excess syrup and add into the sauce mixture you had made earlier - and they are done! These definitely do taste even better when they have been sitting in the sauce for a few hours so we would recommend it - it’s worth the wait!
