Homemade Big Mac Recipe
Makes 1 burger + 10 extra buns
Ingredients
Buns (makes 12)
¾ cup (180ml) full-cream milk
7g dried yeast
3 cups (480g) bread flour
2 tsp fine sea salt
¼ cup (55g) caster sugar
2 eggs
60g unsalted butter, softened
Sesame seeds (for topping)
Egg Wash
1 egg
1 tbsp full-cream milk
Special Sauce
½ cup (150g) mayonnaise
1 tbsp tomato sauce (ketchup)
1 tbsp American mustard
¼ brown onion, finely chopped
2 pickles, finely chopped
¼ tsp garlic powder
¼ tsp paprika
Burger Filling
1 tbsp oil
240g beef mince, chilled
Sea salt (generous pinch)
2 slices smoked cheese
Iceberg lettuce, shredded
¼ white onion, finely diced
Pickles (to taste)
Instructions
1. Make the Burger Buns
1. In a stand mixer fitted with a dough hook, combine all bun ingredients (except sesame seeds). Mix for 8–10 minutes until the dough is smooth and elastic.
2. Transfer dough to a greased bowl, cover, and let rise for 1 hour or until doubled in size.
3. Lightly flour your surface. Divide dough into 12 equal pieces and roll each into a ball.
4. Place balls on a lined baking tray with 5–6cm between each. Cover with a clean towel and let rise until doubled again.
5. Preheat oven to 180°C (350°F).
2. Egg Wash & Bake
1. Whisk the egg and milk together.
2. Brush each bun with egg wash and sprinkle with sesame seeds.
3. Bake for 15–20 minutes, or until deep golden brown.
4. Let cool completely before using.
3. Make the Special Sauce
1. Mix all sauce ingredients in a bowl until well combined. Chill until needed.
4. Cook the Burger Patties
1. Divide the beef mince into two balls and flatten into thin patties. Season with sea salt.
2. Heat oil in a frying pan over high heat. Add patties and cook for 3–4 minutes until browned on the edges.
3. Flip and top each patty with a slice of cheese. Cook for another 1–2 minutes until cheese is melted.
4. Remove from pan and rest briefly.
5. Assemble the Big Mac
1. Slice one bun into 3 horizontal layers (top, middle, and bottom).
2. Toast the cut sides of all three layers in the same pan until golden and crisp.
3. Layer as follows:
Bottom bun: sauce, lettuce, onion, pickles, one patty.
Middle bun: sauce, lettuce, onion, pickles, second patty.
Top bun: place on top and press lightly.
