Looking for a healthy and flavorful rice dish? Try this Pudina Bath (Mint Rice) – a Karnataka-style recipe loaded with fresh vegetables, aromatic basmati rice, and the refreshing taste of mint. This quick one-pot pudina rice recipe is perfect for lunch boxes, family meals, or weekend special menus. With the goodness of pudina, coriander, and a blend of spices, this dish not only tastes delicious but also boosts digestion and immunity.

Cooking time: 15-20 minutes
Serves: 3-4 people
Ingredients :-
Basmati Rice – 1 glass
Fresh Mint (Pudina) – 1 cup
Fresh Coriander – ½ cup
Onion (chopped) – 1
Tomato (chopped) – 1
Capsicum – 1
Brinjal – 1
Potato – 1
Carrot – 1
Green Chillies – 2
Green Peas – ½ cup
Ginger Garlic Paste – 1 tbsp
Garam Masala – 1 tbsp
Pulav Masala – 1 tbsp
Red Chilli Powder – 2 tbsp
Cumin Seeds – ½ tsp
Mustard Seeds – ½ tsp
Salt – to taste
Oil – 3 tbsp
Ghee – 2 tbsp
Water – 2 cups
Method
Prepare the Pudina Paste:
In a mixer jar, add mint leaves, fresh coriander, garlic, and grind into a thick smooth paste. Keep aside.
Prepare the Base:
Heat oil in a pressure cooker. Add cumin seeds and mustard seeds, let them splutter.
Add chopped onion and sauté until light golden.
Add ginger garlic paste and fry till the raw smell disappears.
Add capsicum, green chillies, and sauté for 1–2 minutes.
Add Vegetables:
Add carrot, potato, and brinjal. Sauté until slightly soft.
Add chopped tomato and cook until mushy.
Add Spices & Pudina Paste:
Add red chilli powder, salt, garam masala, and mix well.
Add green peas and the ground pudina-coriander paste. Fry for 2 minutes.
Cook the Rice:
Add washed basmati rice and 2 cups of water.
Mix in pulav masala and chopped coriander.
Close the cooker lid and cook for 3 whistles on medium flame.
Final Touch:
Once pressure releases, open the cooker and fluff the rice gently.
Add 2 tbsp ghee, mix lightly, and serve hot.
