How To Bake Black Forest Cake

Ingredients:
*FOR CHOCOLATE CAKE:| 400 gram all-purpose flour |120 gram Unsweetened cocoa powder |2 teaspoon Baking soda |1 teaspoon Baking powder |1 teaspoon Salt | 4Large eggs, at room temp |300 gram Granulated sugar | 350 gram Mayonnaise |2 cups Brewed coffee ( or espresso coffee ) or warm water |*FOR CHERRY Syrup:| ½ cup Granulated Sugar| ½ cup Cherry syrup or water |*FOR CHERRY FILLINGS:| 400 gram Merlo cherry in juice| 4 tablespoon Cornstarch| 1 cup Granulated sugar | Juice of half a lemon | 1 cup Cherry juice or water | 1_3 tablespoon Kirsch (optional)|*FOR WHIPPED CREAM: | 900 ml Heavy or whipping cream | 1 cup Icing sugar |1 teaspoon Vanilla extract | 120 Gram Grated chocolate
Instructions:
*To make cherry fillings: |Mix half of cherries with 1/2 cup cherry juice, lemon juice and sugar (and Kirsch), boil for few minutes. | In a small bowl, whisk the cornstarch with half a cup cherry juice then add to the cherries and cook until the mixture is thick and glossy. Put aside to cool down, you can add some whole cherries to the mixture. |*To make whipped cream: |Beat the cream with icing sugar and vanilla extract until stiff peak then cool in the refrigerator for at least 2 hours. |*To make cherry syrup to brush the cake layers: |Boil the remaining cherry juice or water with sugar until thickens a little bit. Put aside to cool down. |*To make chocolate cakes: |Preheat the oven to 330°F (165°C). Brush with oil and line 4 (21 cm) cake pans with baking paper. Sift together flour, cocoa powder, baking soda, baking powder, and salt and set aside. | Using an electric mixer beat the eggs with sugar on high speed for 10 minutes. Add the mayo, and beat until blended into the batter, about 30_60 seconds. |Add the dry ingredients in two additions alternating with the coffee/water, stir until everything is well blended. Divide the mixture between the pans and bake on the middle rack for 15 to 18 minutes, or until a cake tester comes out clean. Transfer to a wire rack to cool. See the rest in the comments. | *To Assemble the Cake: | Place the first tier of cake on a cake stands or turntable then pipe with whipped cream and fill with cherry mixture. | place the second tier of cake and repeat the process. | coat with whipped cream then keep in the refrigerator for an hour. | Cover the cake with second coat of whipped cream. | Using your hand cover the whole cake with grated chocolate| You may add some cake powder or cocoa on top, pipe with whipped cream and decorate with cherries.
