Parkin is a very traditional cake from the north of England, usually eaten around Bonfire Night (5th November). This is the Yorkshire version of parkin which includes oats. This version is quite dark because it uses quite a lot of black treacle (molasses). Other versions are lighter in colour and texture because they use more golden syrup. Whichever version of parkin you make, it definitely improves over time, becoming more moist and sticky.
