Ingredients:
500g sugar
200ml boiling water
200g butter
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/4 tsp nutmeg
1 tsp ground dried ginger
1 egg
800-900g flour
For the windows:
227g sugar
142g corn syrup
57g water
For the glaze:
100g egg white
25ml lemon juice
Icing sugar
