Hi, I'm Happy Home and today's recipe is HOW TO MAKE Mango loaf cake!! 🥭
This cake is driving the world crazy 😜
Light, fluffy and super easy to make! You dump all the ingredients in at once and mix using a wooden spoon or spatula - it doesn’t get simpler than that 🥰
I experimented heaps when developing this recipe and I’m so extremely happy with the end product. Since I first made it, my family have been requesting it every second day lol mashallah they literally inhale it..

Mango loaf cake
1 mango
1/2 cup sugar
1/4 cup milk
1/4 cup oil
2 egg
1 cup flour
2 tsp baking powder
1/4 tsp salt
for frosting
1/4 cup white chocolate
4 tbsp. hot milk
1/2 tbsp. butter
Method
1- Preheat oven to 180°C fan forced
2- Prepare loaf tin by spraying with oil and lining it with baking paper
3- remove mango pulp from the mango and place in a mixing bowl. Use a hand held blender to purée the mango
4- To the bowl, add the flour, sugar, egg, milk, oil, baking powder and salt. Using a wooden spoon or spatula mix everything in well (making sure to break down the egg and any flour lumps)
5- Transfer cake mixture to the prepared tin and bake for approx 40-45 mins. Check cake regularly in the last 10 mins by piercing a skewer in it. Once skewers comes out clean, the cake is ready
