Watch my full version video will show you step-by-step how to make this special dish with noodlefish. I don‘t think other people panfry this kind of fish like this. Mine is easy and simple but it takes time to slowly fry the the fish cake to become crispy. See if you like my recipe. First wash the noodlefish, rinse and drain out excess water. Marinate with cornstarch, seafood soy sauce and black pepper. Mix them well and add more cornstarch the second round. Heat up a frying pan with oil and use high heat to pan fry the fish. Put all fish in to make a layer and slowly fry. When it turns to a bit crispy at the bottom, you can cut into half and let the oil goes into the centre. Continue fry and further cut another half to make them 4 quarters. Fry fry fry until the bottom is golden brown. Turn each of the quarters upside down and continue fry. Use 2 eggs - 1 chicken egg and 1 duck egg. Whilsk in the same bowl. Add more oil around the fish cake. Pour the egg around and continue to fry. Pan fry until the egg is cooked then you can put the fish cake into a plate. Sprinkle some mint leaves or basil leaves on top. And then sprinkle some Japanese dried bonito flakes on top.
