Men no Bo Toride—Hakata Style Ramen
Here we introduce Mon no Bo Toride from Shoto Shibuya-ku, Tokyo, and interview the owner, Mr. Masakatsu Nakatsubo.
Nakatsubo was the number one apprentice of one of Japan's most famous ramen shops, Ippudo of Hakata, and Men no Bo Toride is the shop he opened in 2001 upon becoming independent.
We interview him on the secrets of how he has come to take the principles of "alertness, attentiveness, and consideration" cultivated during his Ippudo days, and develop them even further.
