Ingredients:
1 ¾ ounces butter
¼ cup AP flour
2 tbsp curry powder
2 tsp garam masala
2-3 tbsp olive oil
1 lb chicken thighs or breasts
½ large white or yellow onion
3 coves of garlic
1-2 tsp ginger
3 cups chicken stock
½ large apple
1 tbsp honey
¼ cup soy sauce
2 medium carrots
2 medium potatoes
Instructions:
1. Melt butter on medium heat, add flour, whisk to incorporate, cook for 4-5 minutes
2. Add curry and garam masala to roux, cook 2-3 minutes more. Transfer your roux to a bowl and reserve for later. Wipe out pot with paper towels
3. Turn heat to medium high, add olive oil, brown chicken for 2-3 minutes per side and remove for later
4. Sauté onion for 3-4 minutes, add garlic and ginger, sauté 90 seconds more
5. Add in reserved chicken, roux, chicken stock, apple, honey, soy sauce, carrots and potatoes
6. Reduce heat to a light simmer, let simmer uncovered for 45 minutes
