Meringues are crispy egg white cookies. The classic version is made from egg whites and sugar. We use fruit puree and albumin (egg white powder) to make them fruity. Fresh egg whites consist of water and albumin. In any dessert, the proportion of liquid and sugar is significant. Therefore, it is necessary to replace the liquid part of the egg white with fruit puree and keep its whipping properties. With the help of albumin and puree, we recreate the “fruit egg whites” and thus, we can prepare meringues with bright berry or fruit taste.
