Mexican fire-roasted chunky salsa roja / salsa ranchera recipe:
5-7 Roma tomatoes (depending on size)
(can also do add some tomatillos, for a more citrus’y, slightly sour taste, with a bonus of a nicer, slightly darker, browner color [red+green = brown])
1-2 garlic clove
1/4 onion
Small bunch/handful of cilantro
Juice from 1 lime (sub w/ 1tbs vinegar)
2tsp salt
1 chile Guajillo (remove seeds) per 5-7 tomatoes (can do 2 Guajillo if u want a deeper red color and more earthy, mildy-fruity flavor)
1 chile Morita (remove seeds) per 5-7 tomatoes (can do 2 Morita if u want it spicier, smokier & fruitier/brighter flavored)
1 chile de arbol per tomato (remove seeds), for mild
or
2 chile de arbol per tomato (remove seeds), for mild-medium
or
2 chile de arbol per tomato (leave seeds), for medium
or
3 chile de arbol per tomato (leave seeds), for medium-spicy
or
4-5+ chile de arbol per tomato (leave seeds), for spicy
Broil or air-fryer tomatoes for 10mins. 400ºF
Torch tomato skins until black (no need to peel off black/burnt skin)
Briefly toast chile on pan (or torch on super-low setting) until slightly browned
(be careful not to burn; just needs a quick toast)
Put All chiles, just 1 tomato, garlic cloves in blender and blitz to totally liquify it
(add a splash of water if needed, to help blender)
After that, put rest of ingredients (All tomatoes, onion, cilantro, lime juice, salt) in blender, “pulse” until your desired consistency:
5-7 pulses = very chunky
8-13 pulses = medium chunky (like in this video)
14-16 pulses = light chunky; starting to get more liquid’y/thinner
Blitz until totally liquified = thin, taqueria style sauce, salsita roja
Can also use a Molcajete instead; if you want it more authentic w/ a super silky, shiny, smoother, slimy, creamier texture.
