• Method :
Slice potatoes thinly they should be around 1 millimeter thin.
Now place the slices in pairs of two on your worktop.
Brush a small layer of egg white on one row and add a small layer of potato starch on the other
Remove excess flour with a clean brush
Stick the second slice on top
Cut out circles
Drop vertically into a deep fryer
Deep-fry at 170°C
It's very important to wiggle the basket
Dry on a cloth
Color it with silver powder with a clean brush
Here I serve them with a black garlic cream ,dried black tapenade, microgreen.
