⭐ Dahi & Chhaach Curry (Simple Kadhi) Recipe
🧂 Ingredients (3–4 people)
1 cup curd (dahi)
1 cup chhaach / buttermilk
2 tbsp besan (gram flour)
1 tsp turmeric (haldi)
1 tsp red chilli powder
Salt to taste
2–3 cups water (as per thickness)
For tempering (tadka):
2 tbsp oil or ghee
1 tsp cumin seeds (jeera)
1 tsp mustard seeds (rai)
6–7 curry leaves (optional but tasty)
1–2 dry red chillies
A pinch of hing (asafoetida)

👩🍳 Method
STEP 1: Mix the Kadhi Batter
In a big bowl add:
Curd
Chhaach
Besan
Turmeric
Red chilli
Salt
Whisk well until no lumps are left.
Add 2–3 cups water to make a smooth liquid mixture.

STEP 2: Cook the Kadhi
Pour the mixture into a pot.
Cook on low–medium flame for 15–20 minutes.
👉 Keep stirring for the first 5–7 minutes so it doesn’t split.
👉 The curry will become slightly thick and creamy.

STEP 3: Prepare the Tadka
Heat oil or ghee in a small pan.
Add:
Mustard seeds
Cumin seeds
Hing
Curry leaves
Dry red chillies
Let them crackle.

STEP 4: Add Tadka to Kadhi
Pour this tadka into the boiling kadhi.
Mix well and cook for 3–4 minutes more.
