Ingredients for preparation of deep frying:
• 2 Eggs
• 500g - 1kg of pre-marinated Chicken thigh pieces
• Chicken Coating
• Dry Rub Spices
Chicken Coating for 500g to 1kg of Boneless Chicken Thigh meat:
• 1 cup of tapioca starch
• 2 tbsp grounded pepper
• 1 tsp of salt
• 2 tsp basil flakes
• 2 tsp garlic powder
• 2 tbsp chicken base
Dry Rub Spices:
• 1 tbsp salt
• 1 tbsp chilli powder
• 1 tbsp grounded pepper
• 1/2 tsp sugar
• 1/2 tsp 5 spice powder
1. Mix all the dry rub spices in a small bowl & put aside. Put together & mix all the dry ingredients in a bag/bowl/plate to make the chicken coating.
2. In separate bowl, break 2 eggs in and mix. Now put your pre-marinated chicken pieces in the egg mixture, place in your chicken pieces into the flour mix and try to evenly coat each piece, then onto the drying rack. Repeat for the rest of the chicken.
3. Heat up your 1.5L cooking oil in a deep pot/deep fryer at 350°F or 175°C. Dip chopsticks in and when it starts bubbling, you are ready to start deep frying.
4. Depends on efficiency of your deep fryer/kitchen equipment but I put in 6-8 pieces of chicken and fried them for 4-5 minutes. Blot with paper towel to remove some oil.
You're done! Now enjoy by itself with the dry rub or as a side for your meals!!!!! Feel free to freeze the leftover chicken in a freezer bag (remove air before sealing), it should last at least 3 months in your freezer.

For my family...basically make sure there's soy sauce, garlic, ginger, pepper and seasonings. Add some wine if you want a stronger flavour or alternatively use premade marinade, we've used korean marinade for pork and beef and it was still MMMMMM. Try to leave chicken in marinade for at least an hour!
