Jasmine Oolong Cake with Oolong Chocolate Glaze | ASMR Baking

An elegant travel cake inspired by my favourite tea, jasmine oolong. Enjoy!

Makes one cake (23x4.5x3.5cm)
Cake Batter
dried jasmine flower 3g
loose leaf oolong tea 4g
icing sugar 50g
butter 70g
egg 90g
baking powder 1.5g
cake flour 80g
Glaze
white chocolate 150g
neutral oil 25g
tea powder (made from above)

1. Remove the butter from the fridge and soften at room temperature. Remove the stem of the dried jasmine flower, and together with loose leaf oolong tea, blend into a powder.
2. In a mixing bowl, mix icing sugar, softened butter, and 5g tea powder until homogenous. Add eggs one by one and mix until well incorporated. If the batter separates, blend with a stick blender and bring it back together. Mix baking powder and cake flour and sift into the batter. Fold until well incorporated.
3. Bake in a well-greased mould in preheated oven. 170min for 25min or until the center is cooked. Cool completely on a cooling rack.
4. Melt white chocolate in the microwave with medium heat (making sure the chocolate doesn’t exceed 30C) and mix with oil until the mixture is homogeneous. Add 2g tea powder and mix until well incorporated. Glaze the cake with the chocolate glaze and shake off any excess, decorate with jasmine flowers.
