Ingredients:
1/2 cup Instant Polenta
1/2 cup Parmesan, grated
4 Italian Sausage Links, cut into chunks
2 Yellow Bell Pepper, cut into chunks
1 pint Cherry Tomatoes
Salt and Pepper
Method:
1. Heat grill to medium heat. In a small pot, cook polenta based on package directions. Fold in parmesan cheese, season to taste, and adjust consistency if desired. Should be slightly loose.
2. On large, water soaked skewers, repeat the pattern of yellow pepper, sausage, and tomato. Aim for 4-6 kabobs.
3. Place kabobs on grill and turn every 2-3 minutes, so sausage caramelizes evenly and is fully cooked.
