Chef Deena embarks on a flavorful adventure, rediscovering the roots of native recipes and reimagining them with a contemporary twist. In today’s video, you all will be witnessing an interesting Biriyani recipe that is prepared using Country Chicken. According to Chef Deena, Biriyani preparation is always a simple process when the concept is understood thoroughly. The Naatu Kozhi Biriyani recipe is taught and demonstrated by Mr. Velmurugan, Manthothathu Virundhu, and Erode. A special masala is curated for this recipe by blending whole spices like dry Red chilies, Nutmeg, Mace, Cardamom, Cloves, Marati mokku, Bay leaves, Kalpasi, Cinnamon stick, and Star anise. The aforementioned ingredients are blended to a fine paste, mixed with curd, coated with cleansed chicken, allowed to marinate for an hour, and then incorporated into the preparation.
