Simple & Easy Cheese Cake

Crust:
300 gr. All Purpose Flour
100 gr. Fine Sugar
1 Egg Yolks
2 gr. Salt
200 gr. Cold Unsalted Butter

Filling:
250gr. Full Milk
200 Fine Sugar
4 Egg Yolks (yolks from eggs that weigh 58-60gr. Each with shell)
Lemon Zest (zest from 1 lemon)
1 gr. Salt
10 Sheets Gelatine (from 1,7 gr. per sheet) = 18 gr. Gelatine Powder
500 gr. Cream Cheese
500 gr. Whipping Cream 35%
