Blueberry Filling:
1 1/4 cup fresh blueberries
2 tbsp sugar
¼ tsp salt
1 tsp lemon juice (optional — brightens flavor)
Dough:
3¾ cups all-purpose flour (16 oz by weight)
4 tsp baking powder
1 tsp salt
½ tsp baking soda
1/3 cup sugar
1 1/2 stick cold butter
1 1/2- 1 3/4 cup cold buttermilk
1/2 tsp vanilla
Glaze
½ cup powdered sugar
1 tbsp milk
¼ tsp vanilla extract
Note: can also use sweet condensed milk instead. You can also use some lemon juice instead of milk.
