Bacon Brunch Bites 🥓🍳 A scrumptious brunch treat or a quick breakfast on the go!

These Bacon Brunch Bites are everything I love about brunch in one neat little package! Bacon, French Toast, and an Omelette-type filling.

Have fun with this recipe - change up the type of bread you use, add onions or other veggies instead of the broccoli, try different types of bacon and different types of cheese. Or go simple and crack a whole egg into the middle without the extra toppings.

Freeze the Bacon Brunch Bites in an airtight container and pull them out as needed. They make the perfect quick breakfast, or make them ahead and include them in a big breakfast!
