Roosted beetroot and nuts with spicy garlic prawns.

This quick and easy will become one of your new favourites meal.
It takes less than 20 minutes to put all together.
This roosted beetroot and nuts has earthy sweetness, fruity & mild tart taste pairs well with prawns.
As you can see, the beet juice bleeds into the glaze, which turns it a gorgeous purple and makes nuts glazed and by adding fried prawns create a healthy low-carb, delicious and satisfying meal.
----Ingredients to make roosted beet and nuts :
-1 Large size skinless Beetroot
-Almond
-Walnuts
-2 spoon balsamic vinegar
-1 spoon Backing/cooking Olive oil
-1-2 spoon backing/cooking garlic olive oil ( +-)
---Marinate 4p prawns:
-½ Tsp Granulated garlic
-½ Tsp smocked paprika
-1/3 Tsp lemon paper spice blend
-Red chili flakes
-2 Tbsp garlic olive oil
-Rocket

-Cut beet into thin strips, thickness of strips around 2-3 mm thick
If you slice to them too thin they will burn easily
-Roast beetroot on a tray at 170C fan-forced. Watch out almond and walnuts can burn easily
-Heat marinated oil in a pan and add prawns to it.
Fry prawns on a medium high heat for 3 minutes on each side for fresh prawns.
