There are several versions of diet coke chicken doing the rounds in various slimming clubs and my recipe is about to throw another version into the mix.

The popularity of the dish can be chalked up to a few things. First off, it's a cinch to make. You just throw a few ingredients into a pan, let it simmer, and voila - dinner is served. Secondly, it’s bloody tasty and thirdly it’s just that little bit odd.

You also don’t have to use Diet Coke, in this version I am actually using a Coke Zero and it works just as well but the bottom line is, just use a sugar-free coke/pepsi – whatever.
