Palm oil tilapia soup Recipe
Palm oil tilapia soup or “Dzomi Akpa Detsi” popularly called in the ewe language of Ghana. Is basically tomato soup with tilapia as it’s main protein with a palm oil stew base. Often served with ”Akple” (corn and cassava dough swallow)
Ingredients
Tilapia
Palm oil
Tomato paste
Scotch bonnet (red and green)
Ginger, garlic and onion
Onion
Salt
Stock cube
Recipe
Clean/ wash Vegetables and Tilapia thoroughly.
Blend together half an onion, 3 cloves of garlic and ginger to make tilapia marinade.
Rub marinade all over tilapia with A teaspoon of salt and 1 stock cube. Marinate for 10 minutes or more.
Blend together scotch bonnet (red), one bulb of onion, 4 fresh tomatoes, 3 garlic cloves, and ginger to make pepper mix.
Next, on medium heat, using a clean dry pot, fry some palm oil for a min or two and add, thinly sliced onion (half a bulb of onion)
Next, add tomato paste, cook for 2 mins. Add pepper mix, cook for 3 mins and add a teaspoon of salt and one stock cube. Give that a good mix and cook for 5 mins.
Gently add marinated tilapia along with stock and mix evenly. Add a substantial amount of water to reduce thickness.
Add some scotch bonnet to enhance flavor. Cover and cook for 10 mins.
Voila! Served with Akple
