Recreating Conti's Pistachio Crunch (Dubai Chocolate Inspired Cake)
RECIPE
INGREDIENTS:
MOIST CHOCOLATE CAKE
80 g flour
30 g cocoa
142 g brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 egg
36 g neutral oil
9 g vinegar
167 g warm water
Bake at 330 F / 165 C preheated oven for 22-27 minutes.
PISTACHIO CUSTARD SAUCE
1/4 cup heavy cream
1/4 cup whole milk
2 egg yolks
2 Tbsp sugar
3 Tbsp pistachio paste
1 tsp vanilla extract
PISTACHIO KATAIFI
70 g kataifi
50 g butter
3-5 Tbsp pistachio paste
DARK CHOCOLATE + PISTACHIO + WHITE CHOCOLATE ROSE MOUSSE
90 g dark chocolate
90 g white chocolate
60 g pistachio cream
350 g heavy cream
190 g milk
50 g heavy cream
2 egg yolks
25 g sugar
2 tsp gelatin powder
CHOCOLATE GANACHE
1/3 cup cream
1/2 cup dark chocolate
1 Tbsp butter
