This is a medical medium recipe that we are trying out for the first time! Yum. Typically, this recipe calls for cheese, cream, milk, gluten, oil, and refined sugar. This recipe is fat free - although we have added some fat with our raw, organic cashew kreem (see link below). We used gluten free brown rice penne pasta - just try and avoid corn based or whole wheat pasta.
We have tweaked this recipe, adding more of each of his recommended recipes to fill it out. The original recipe calls for 12oz of pasta, and the typical bag of pasta is 16oz, which is why we upgraded the other amounts.
Pair it with a leafy green salad for a yummy meal! Also, we recommend you do some slight twists yourself.

Ingredients:
6 cups organic yellow potatoes, diced
3 cups carrots, diced
16 oz gluten free pasta, we use brown rice - avoid corn pasta
4 1/2 Tbs onion powder
3 Tbs fresh lemon juice
1 1/2 Tbs fresh garlic, minced
1 1/2 Tbs paprika
2 tsp sea salt
1/4 + 1/8 tsp cayenne
Preheat the oven to 400 degrees F.
Add 3 inches of water to a medium pot, insert a steaming basket, add the chopped potatoes and carrots, and cover. Steam for 15 to 20 minutes until tender. Cook the pasta according to package instructions, drain, and place back in the pot.
Once the potatoes and carrots are tender, remove them from the heat and place in a food processor along with the onion powder, garlic powder, paprika, cayenne (if using), lemon juice, and sea salt (if using). Process until smooth. Pour the sauce onto the pasta in the pot and stir until evenly coated.
Transfer the the sauced pasta to a medium baking dish and smooth the top. Bake for 25 to 30 minutes until browned on top. Cool for 5 minutes before serving.
TIPS
While high-quality sea salt or mountain rock salt is an optional inclusion in this recipe, the recipe is more healing without salt. Over time, you may may wish to reduce or exclude the salt.
A gluten-free pasta with grains such as millet, quinoa, or brown rice is an option for this recipe. Be sure that your pasta does not contain corn or egg.
