Yakhni Pulav is a flavorful and aromatic rice dish with roots in South Asian cuisine, particularly popular in regions like Pakistan, India, and Afghanistan. It's made with tender meat (usually chicken, beef, or lamb), cooked in a rich, spiced broth (known as yakhni), and combined with basmati rice.
Here’s a general recipe for making Yakhni Pulav:
Ingredients:
Mutton 1 kg, cut into pieces
Basmati rice: 1 kg, soaked in water for 30 minutes
Onion: 2 large, thinly sliced
Ginger-garlic paste: 2 tablespoon
Whole spices:
6 green cardamom pods
2 cinnamon stick
8-10 cloves
2 bay leaf
2 black cardamom
2 tablespoon coriander seeds
1 tablespoon fennel seeds
1 tablespoon zeera
6-8 cleves garlic
1 inch ginger
One roughly chopped onion
Yogurt: 1/2 cup
Cumin seeds: 1 TBSP
6 Green chilies crushed
Salt: to taste
Water: 6 cups (for yakhni)
Ghee or oil: 2 tablespoons
Cilantro (coriander leaves): chopped for garnish
Mint leaves: optional, for garnish
Method:
Prepare the Yakhni (Broth):
In a large pot or a pressurecooker add meat water and whole spices ( corriander seeds, badi elaichi, green elaichi, black pepper corns, fennel seeds, cardamom, cinnamon, cloves, bay leaf) roughly chopped onion. Garlic, ginger,
add water (around 6 cups)
Simmer for 30-45 minutes (or until the meat is tender or pressure cook for 15 minutes )to make the broth.
Prepare the Rice:
In another large pan, heat some ghee or oil. Add cumin seeds, cinnamon stick, green cardamom, bay leave, and sliced onions, sauté until the onions turn golden brown.
Add cooked mutton and sauté.
Add yoghurt and cook 2 minutes on low flame
Then strain yakhni (mutton stock) and add into a pan.
Add the soaked rice.
Add handfull coriander leaves and slit green chillies.
Cook on medium-high heat until the rice absorbs the broth, then cover the pot and reduce the heat. Cook for 15-20 minutes on low heat.
Final Touch:
Once the rice is cooked, garnish with chopped cilantro and mint leaves (optional).
Serve hot with a raita or salad on the side.
